Who else is over this heat? The oppressive blanket of perpetual humidity has this overheated mama on a quest to find refreshing cold noodles. Jimbo’s is my family’s go-to udon shop and for good reason. Their noodles are delicious and well-executed, and their broths are flavorful without the addition of MSG or excessive salt. It’s not fancy, but this family-run restaurant prides itself on quality ingredients.
Jimbo’s salad udon comes with jidori chicken, shrimp or tofu. The thin noodles, made fresh daily, soak up the yummy shoyu dressing, but you can request regular noodles. Slippery and chewy, they complement the crunchy cucumbers and lettuce and pops of cherry tomatoes and sweet summer corn in a hearty, blessedly chilled symphony.
