Earlier this month, after murmurs that “Top Chef” finalist Sheldon Simeon would be doing a four-night collaboration at Vintage Cave, I received a text from fellow Nonstop blogger Mari Taketa asking, “Are you going to the Sheldon Simeon collab at Vintage Cave?”
Jokingly, I replied “Haha, I didn’t allocate for that… you going?”
She responded with “I’m too busy turning over sofa cushions for loose change. This one I want. You in then?”
I had read Mari’s letter to Simeon soon after his elimination from “Top Chef,” and it was apparent how much this event meant to her. “Count me in.”
Collaboration at Vintage Cave
Vintage Cave chef Chris Kajioka started the 16-course dinner off with a series of snacks.
The first snack was a chilled Kumamoto oyster with green apple and shiso. The bright green apple flavors brought out the salinity of the oyster. I love the presentation of the oyster in a slate gray bowl lined with smooth pebbles.
