Since the upcoming Muscular Dystrophy Association (MDA) of Hawaii Spring Soiree is this Saturday, I’ve been looking at the lineup of chefs and getting very excited. One of the new restaurants on the list is Top of Waikiki, and they’re showcasing their (sort of) new chef, Lance Kosaka.
If you recall, Kosaka was the executive chef at the Pineapple room for 17 years, then opened Cafe Julia at the YWCA. His food has a distinct style, and I miss it. Well, he got pegged to be the chef for the Sky Bar, which is being built just below the Top of Waikiki, and a little while after he got the job, they asked him to take over the main restaurant.
I saw him recently at the Hawaii Food Bank’s Great Chefs Fight Hunger, and his pork tacos ran out fast (one guy liked it so much, he took FOUR servings, hello!), so I was pretty stoked to see he’ll be at the MDA Spring Soiree. He invited me to the Top of Waikiki to get a preview of his dish, which I think will run out early again.
If you want to buy tickets, they are still available at MDASoiree.com. The event is semi-formal — so you should dress up — but this being Hawaii, you’ll probably see a lot of aloha attire as well. This year, the MDA again has 15 food and drink tasting stations:

We stuck around to talk story a little more with Kosaka to see what’s new at the Top of Waikiki, especially since he took over last summer. He’s added a lot of new things to the menu, like local fish, more local ingredients, and his local-kine flair that he’s known for. They even have a kamaaina special this month that’s a great deal.
