It started with a text from my sister. She was at Ginger & Smoke, a mobile food stand that has been popping up at the HMSA farmers’ market and Crossfit gyms, and she said I had to check out their smoked meats and tender brisket with burnt ends.
Brisket?! I messaged Ginger & Smoke’s Facebook page and set up a meeting with co-owner Gerald Boyer. He and Scott Ohtoro are the grill masters and they produce high quality barbecue at reasonable prices. Boyer is from Saipan and prides himself on his original recipes. He’s constantly experimenting with time, smoke and temperature in a quest for perfection.
Their succulent barbecue does not disappoint. The brisket is juicy, flavorful and comes with real burnt ends. The sides are refreshing and balance out the richness of the meats. And this Friday, they’ll be downtown for Awesome eats. Pre-orders are recommended!
